Martin Frislev Ammitsbøl's first appearance on stage was at the age of fifteen in the musical comedy Columbus in the Depot at Gilleleje. This soon led to such prominent roles as Apollo in The Illiad, and a long-standing collaboration with director Lars Kaaber in the Shakespeare productions Midsummer Night's Dream (as Moth); A Winter's Tale (Clown); Twelfth Night (Feste); As You Like It (Jacques); and Measure for Measure (Lucio). In the same ensemble, Ammitsbøl played Acaste in Molière's The Misanthrope (in Esrum and Copenhagen) and in a burlesque version of Chaucer's Canterbury Tales. Martin Ammitsbøl has studied acting with Ilse Rande and Lene Vasegaard and participated for eight months in Lotte Horne's and Finn Storgaard's Theatre Workshop. In 2001 he was offered a part in Robert Wilson's Woyzeck at the Betty Nansen Theatre and continued on the European Tour starting at the famed Berliner Ensemble. Martin Ammitsbøl has played Thomas in Lars Kaalund's In a Basement and has participated in several cabarets, Lars Knutzon's production of Molière's Scapin's Intrigues, and Fassbinder's Garbage, the City and Death. Martin Ammitsbøl has appeared on film in Rostrup's Close By (1999), Corsini's The Rehearsal (1999), Elmer's Mona's World (2000), Fredholm's Clapping with one Hand, and starred in Concrete Hearts and Morten Nørgaard's Next Step (2005).
